The Quick And Easy Way To Cook When You Have Behcet’s

Here are my typical evenings with Behcet’s disease:

I get home from work and, of course, I’m starving. But I’m also exhausted.

Some days, I’ve planned ahead and have an easy meal of leftovers that I can heat up in the microwave.

Some days, I’ve slacked off and I’m left scrambling eggs with veggies or having granola and milk with some fruit.

Then there are the days where I’m so exhausted, I lie down on my bed for a “quick nap” and wake up with my alarm going off.

Sound familiar?

Well, while reading the American Behcet’s Disease Association’s (ABDA) Newsletter, they highlighted the benefits of a well-balanced diet.

Yeah, yeah. I got that lecture from my rheumatologist, too.

HOWEVER, they included a list of helpful tips from The Essential Arthritis Cookbook to help you get that nutritional variety throughout the day without exhausting yourself. My favorites?

  • When you are feeling well enough to cook, make extra and save it in the freezer for those not-so-good days.
  • Salty foods that are low in fat are good to eat when you feel nauseous.
  • Liquids full of nutrients–think healthy smoothies or breakfast drinks–are a good snacks.

The Essential Arthritis Cookbook also has great recipes that are nutritious, delicious, and easy on painful joints and fatigued bodies. These recipes are incredible! The best part of these recipes are that they:

  • use ingredients that have anti-inflammatory properties
  • reduce preparation time
  • use fewer ingredients, which means less chopping!
  • limit the number of utensils, which…
  • …also shortens the clean-up time!

My only thought is this: How quickly can I get one?!
