This Smoothie Bowl Makes Lyme Life a Little More Tolerable

Having chronic Lyme pretty much means I am chronically fatigued, choking down so much food to try and gain energy from it, to no avail.

But, I have gotten to the point where whatever I eat, it has to be clean, it has to be helpful (anti-inflammatory, energizing, etc.) and it has to TASTE GOOD!

Welcome the smoothie bowl. I am a smoothie bowl FIEND. To make the one above, check out the recipe below, filled with veggies, healthy fats and anti-inflammatory ingredients to fit your dietary needs. Of course, it’s gluten-free, dairy-free and refined sugar-free.

  • Two stalks of kale
  • Handful of spinach
  • 1 Tbsp of almond butter
  • Half frozen avocado
  • Half frozen banana
  • Handful of blueberries
  • 1 tsp vanilla extract
  • Three large ice cubes
  • Add cinnamon, a date, maple syrup, honey, agave or coconut nectar as needed
  • Enough (full fat) coconut milk, almond milk, etc. to get it moving in the blender
  • Top with banana, hemp seeds, bee pollen, pumpkin seeds, chia seeds, cacao nibs or toasted, unsweetened coconut flakes
