I'm a published author and freelance writer. I am the author of English for Pharmacy Writing and Oral Communication. I am published in academic journals, Chicken Soup for the Soul: Running for Good, Huffington Post, Women's Running, Ultrarunning Magazine, Cancer Today, and other publications. The pandemic propelled my early retirement as an adjunct professor of theology/religion studies. And I became a self-taught acrylic painter. I have been running races 33 years. I am a an endurance athlete and run ultramarathons. I am training for my 34th ultramarathon and my 10th 24-hour ultramarathon. I suffered with EoE (eosinophilic esophagitis) for 26 years. I finally solved the mystery in September 2022. I created my own diet free of preservatives, additives, food coloring, hormones, antibiotics, insecticides, and pesticides. I'm on a mission to educate the medical profession and to advocate on behalf of patients suffering from EoE and life-threatening food impactions. When I'm not writing, running, or painting, I'm knitting, gardening, snowshoeing, baking, rock climbing, hiking in the national parks, and creating delicious and healthy recipes to keep my esophagus healed and healthy, and to maintain my ZERO eosinophils. My debut memoir - Come What May; I Want to Run: A Memoir of the Saving Grace of Ultrarunning in Overwhelming Times - is forthcoming in 2023. I invite you to visit my website: miriamdiazgilbert.com
